Hygiene concepts in the bakery industry
The bpc hygiene competence center has taken up and solved a special problem in the bakery industry:
Black mold(Aspergillus niger) is a serious problem, especially in industrial baking. A field trial concerning the treatment of fermentation carriers of different production lines in a large bakery indicates that the use of ASPEREX compared to conventional disinfection/cleaning can control and even prevent the occurrence of black mold many times more efficiently.

In order to evaluate the results of the smear tests, the treatment of the covers of fermentation media was carried out with/without ASPEREX, respectively.
Implementation:
10 Fermentation trays with freshly cleaned covers.
Step 1:
Four fermentation trays were covered with covers uniformly sprayed with ASPEREX (fermentation trays Nos. 1 - 4).
Four fermentation trays were covered with covers uniformly sprayed with a conventional brand disinfectant as a reference product (fermentation trays Nos. 11 - 14).
One fermentation tray was covered with a cover that had not been treated (fermentation tray No. 15, reference).
Follow-up steps:
After 7 - 10 days, slaps (total microbial count & mold) were taken. The slap-off points were marked.
After each knockdown, a fixed number of fermenters were sprayed with ASPEREX without changing the covers.

The bottom line:
Even a single treatment with ASPEREX results in sufficient prevention against black mold over a period of 21 days. This means that black mold infestation can be ruled out with regular treatment with ASPEREX. This effect has not been achieved with conventional disinfectants to date. ASPEREX consequently allows new hygiene routines with reduced cleaning and disinfection cycles. This brings significant resource and cost savings.
